Just Bake Banana Bread

Towards the end of our (short) quest for the per­fect banana bread, we tried this Just Bake Banana Bread that we picked up from the bakery out­side the Coles in Westfield Parramatta.

We had high hopes for this banana bread giv­en the high per­cent­age of banana used (26%) at the very reas­on­able price of $5.00 for 1 kg.

First impres­sions, though, revealed a banana bread that didn’t have the smell of banana that is char­ac­ter­ist­ic of banana bread, but a stronger sug­ary sweet­ness. This same sweet­ness car­ries through in the taste that recalls more of a floury cake than a bread with the banana notes far less pro­nounced than we’d expec­ted from the high banana con­tent and the dark tan col­our of loaf. Overall, the banana bread is moist with a tender, yet not overly crumbly, tex­ture, but could do with a more stronger banana fla­vour with a more restrained sweet­ness.
