Bilpin Blush Pink Lady Cider

The Blue Mountains occupy a soft spot in our hearts after D spent a year work­ing in the area. And after enjoy­ing their refresh­ing Blue Mountains Apple Juice at the Fairmont Resort, we try this Bilpin Blush Pink Lady Cider, which is made with only Pink Lady apples loc­al to the Blue Mountains.

The cider has a pale straw col­our, a very bub­bly effer­ves­cence and a sweet apple nose with mild bit­ter alco­hol­ic notes in the back­ground. Served chilled, the fla­vour of the Pink Lady apple is sus­tained through­out each sip, with the sweet­ness of fresh Pink Lady apples com­ing through in the head, mask­ing the bit­ter alco­hol­ic under­tones in the back­ground, before a crisp apple acid­ity devel­ops to cre­ate a more pro­nounced and tart apple fla­vour towards the end of the body, leav­ing a refresh­ingly crisp apple fla­vour linger­ing briefly in the after­taste. The apple fla­vour is less crisp but more round and sweet (with more pro­nounced bit­ter alco­hol­ic notes) than the Orchard Thieves Apple Cider.
